  • 2 lbs potatoes, peeled and chopped
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix ground beef, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and thyme until just combined.
  3. Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet. Bake for 20 minutes or until browned.
  4. In a skillet with olive oil, sauté sliced onion and garlic until translucent. Add beef broth and Worcestershire sauce; let simmer.
  5. Whisk in cornstarch slurry until thickened. Season with salt and pepper.
  6. Boil peeled potatoes and minced garlic until tender. Drain, then mash with warm milk, butter, salt, black pepper, and fresh parsley until smooth.
  7. Combine baked meatballs with gravy in the skillet; serve over garlic herb mashed potatoes.
