- 2 medium tomatoes (diced)
- ½ small red onion (diced)
- ¼ cup fresh cilantro (chopped)
- 1 large avocado (sliced)
- 1 ½ cups crispy tortilla strips
- ½ cup vegetable oil (for frying)
- Salt (for seasoning)
Instructions
- Prepare the dressing by mixing mayonnaise, Greek yogurt, taco seasoning, lime juice, salt, chipotle powder, and cayenne in a bowl; set aside.
- Season chicken cutlets with salt and taco seasoning. Cook in a skillet with oil until they reach an internal temperature of 165°F (74°C). Let rest before slicing.
- In a large bowl, combine romaine lettuce, most diced tomatoes, red onion, cilantro, and ¾ of the dressing; toss gently to combine.
