  • 600 g braising beef (chopped)
  • 2 tbsp olive oil
  • 330 ml beef broth
  • 360 ml beef stock
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 small zucchini (chopped)
  • 2 tbsp plain flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cloves garlic (peeled and minced)

Instructions

  1. Preheat your oven to 160C/325F.
  2. In a Dutch oven, heat olive oil over medium-high heat. Coat the chopped beef with flour, salt, and pepper, then brown in the pan for about 6-8 minutes.
  3. Stir in minced garlic and cook until fragrant. Add the beef broth and stock; bring to a boil.
  4. Cover and transfer to the oven; cook for 3 hours.
  5. Add chopped bell peppers and zucchini; cover and cook for an additional 5 minutes.
  6. Serve hot with freshly grated parmesan cheese and garnish with parsley.
