Ingredients
- 600 g braising beef (chopped)
- 2 tbsp olive oil
- 330 ml beef broth
- 360 ml beef stock
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 1 small zucchini (chopped)
- 2 tbsp plain flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cloves garlic (peeled and minced)
Instructions
- Preheat your oven to 160C/325F.
- In a Dutch oven, heat olive oil over medium-high heat. Coat the chopped beef with flour, salt, and pepper, then brown in the pan for about 6-8 minutes.
- Stir in minced garlic and cook until fragrant. Add the beef broth and stock; bring to a boil.
- Cover and transfer to the oven; cook for 3 hours.
- Add chopped bell peppers and zucchini; cover and cook for an additional 5 minutes.
- Serve hot with freshly grated parmesan cheese and garnish with parsley.
