Description

Warm, soft S’mores Cookies are a delightful blend of two beloved treats, bringing the nostalgic flavors of campfire s’mores into a chewy chocolate chip cookie. Each bite offers a perfect combination of melted chocolate, gooey vegan marshmallows, and crispy graham cracker pieces, making them an irresistible dessert for any gathering.

  • 1 cup salted butter (softened)
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups mini vegan marshmallows (divided)
  • 2 cups graham crackers (broken into small pieces)
  • 1/2 cup milk chocolate chips
  • 1/2 cup semisweet chocolate chips
  • 2 Hershey's bars (broken into pieces)

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla extract; mix until fully combined.
  4. In a separate bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  5. Gently fold in graham cracker pieces, marshmallows, milk chocolate chips, and semisweet chocolate chips.
  6. Use a cookie scoop to place dough balls on the prepared baking sheets with ample space between each ball.
  7. Bake for approximately 10 minutes; remove from oven and press additional marshmallows, graham cracker pieces, and Hershey bar bits on top.
  8. Return cookies to the oven for an additional 1-2 minutes until they are fully baked.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
