- 2 cups mini vegan marshmallows (divided)
- 2 cups graham crackers (broken into small pieces)
- 1/2 cup milk chocolate chips
- 1/2 cup semisweet chocolate chips
- 2 Hershey's bars (broken into pieces)
Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla extract; mix until fully combined.
- In a separate bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
- Gently fold in graham cracker pieces, marshmallows, milk chocolate chips, and semisweet chocolate chips.
- Use a cookie scoop to place dough balls on the prepared baking sheets with ample space between each ball.
- Bake for approximately 10 minutes; remove from oven and press additional marshmallows, graham cracker pieces, and Hershey bar bits on top.
- Return cookies to the oven for an additional 1-2 minutes until they are fully baked.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
