  • 1 Recipe Slow Cooker Mexican Chicken
  • 6 burrito-size tortillas
  • 1 cup shredded sharp cheddar cheese
  • Olive oil
  • 2 tablespoons olive oil for sauce
  • 1 tablespoon butter
  • 3 tablespoons flour
  • 2 cups low sodium chicken broth, warmed
  • 1/2 teaspoon cumin
  • 1/41/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup sour cream
  • 1/2 4 oz. can mild chopped green chilies
  • 1/2 cup shredded sharp cheddar cheese for sauce
  • Hot sauce to taste (optional)
  • Tomatoes (optional)
  • Avocados/guacamole (optional)
  • Cilantro (optional)
  • Salsa (optional)
  • Tortilla strips or chips (optional)

Instructions

  1. Prepare the Slow Cooker Mexican Chicken and drain excess liquid.
  2. Preheat the oven to 400°F and line a baking sheet with foil and a rack.
  3. Fill each tortilla with 1/2 cup of chicken filling and cheese; roll tightly.
  4. Place burritos on the rack and brush with olive oil.
  5. Bake for 18-20 minutes until golden brown; broil if desired for extra crispiness.
  6. For the sauce, melt butter in olive oil, whisk in flour, then gradually add warmed chicken broth until thickened.
  7. Stir in green chilies and cheese until melted, then mix in sour cream.
  8. Serve burritos topped with the sauce and your choice of toppings.
