  • 450g (1 lb) flank or sirloin steak
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tsp ground cumin
  • 1½ cups whole milk
  • ½ tsp ground cumin
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 cups broth or water
  • 1 cup long-grain white rice
  • 1 tsp garlic powder
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Pat steak dry, rub with olive oil and seasonings. Sear in a hot skillet for 4–5 minutes on each side. Let rest before slicing.
  2. Rinse rice until water runs clear. Sauté in olive oil with garlic powder, then add broth or water and cook until fluffy.
  3. In the same skillet, melt butter and sauté garlic. Add milk, bring to a simmer, then stir in cheeses until melted and smooth.
  4. Serve rice topped with sliced steak and queso sauce. Garnish with cilantro, lime wedges, avocado slices, or jalapeños.
