  • 500 g boneless skinless chicken breast, diced into 2.5 cm cubes
  • 6 tablespoons cornstarch
  • 50 ml vegetable oil for frying
  • Salt and pepper to taste
  • 1 onion, thinly sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons demerara or brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, grated
  • 432 g tin pineapple pieces, drained (reserve the juice)

Instructions

  1. In a bowl, toss the diced chicken with salt, pepper, and cornstarch until well coated.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add the coated chicken to the skillet in batches to avoid overcrowding. Fry until golden brown and cooked through, about 5-7 minutes per batch. Remove chicken from skillet and set aside.
  4. In the same skillet, add sliced onion and bell peppers. Stir-fry for about 3-4 minutes until slightly tender.
  5. In a mixing bowl, combine ketchup, cider vinegar, demerara sugar, soy sauce, ginger, garlic, and reserved pineapple juice. Pour this sauce over sautéed vegetables in the skillet.
  6. Add fried chicken back into the skillet with veggies and sauce. Stir well to coat everything evenly in sauce. Add pineapple pieces last; simmer for an additional 2-3 minutes until heated through.
  7. Serve hot over rice or noodles for a complete meal!
