  • 1 onion (chopped)
  • 1 bell pepper (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons taco seasoning
  • ¾ cup enchilada sauce
  • 2 cups shredded cheddar cheese (divided)
  • 1 box corn muffin mix (8.5 oz)
  • ½ cup sour cream
  • ½ cup corn kernels (canned, fresh, or frozen)
  • â…“ cup milk
  • 1 egg

Instructions

  1. Preheat oven to 350ºF.
  2. In a large skillet, cook ground beef with onion, bell pepper, and garlic until beef is browned; drain fat.
  3. Stir in taco seasoning and water; simmer until reduced. Add enchilada sauce and mix well.
  4. Transfer the beef mixture to a greased baking dish; top with 1½ cups cheese.
  5. In a bowl, combine corn muffin mix, sour cream, corn kernels, milk, and egg; spread over the beef.
  6. Sprinkle remaining cheese on top and bake for 35-40 minutes until golden brown.
  7. Garnish with chopped cilantro before serving.
