  • 2 carrots, cut into bite-size pieces
  • 2 medium potatoes, cut into bite-size pieces
  • 1/2 yellow onion, diced
  • 2 chicken breasts, cubed
  • 2 Tbsp. olive oil (or coconut/vegetable oil)
  • 2 tsp. ground ginger
  • 2 tsp. minced garlic
  • 1 jar (4 oz.) red curry paste
  • 2 cans coconut milk
  • 1/4 cup + 2 Tbsp. peanut butter
  • 5 Tbsp. brown sugar
  • 4 tsp. soy sauce
  • Juice from 1 lime

Instructions

  1. In a large skillet or pot, heat the oil over medium-high heat. Add onions, carrots, and potatoes; sauté for about 4-5 minutes until softened.
  2. Incorporate cubed chicken along with ginger, garlic, and red curry paste; mix well and sauté for an additional couple of minutes.
  3. Stir in coconut milk and reduce heat to medium-low; let simmer for about 10 minutes until veggies are tender.
  4. Add peanut butter, brown sugar, soy sauce, and lime juice; cook for another 4-5 minutes until well combined.
  5. Serve warm over your choice of rice or garnished with chopped peanuts for extra crunch.
