  • 4 cloves garlic (minced)
  • 1 shallot (minced)
  • 2 tablespoons sun-dried tomatoes (drained and julienne cut)
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 3 ounces baby spinach
  • Fresh parsley (optional, for garnish)

Instructions

  1. Cook the spaghetti squash: Pierce the squash several times with a knife and microwave on high for 8–12 minutes until tender. Let cool.
  2. Season the chicken: Sprinkle salt, pepper, and Italian seasoning over chicken pieces.
  3. Cook the chicken: In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add chicken and cook for about 7 minutes or until no longer pink.
  4. Prepare the sauce: Remove chicken from pan; add remaining butter, garlic, and shallot to sauté for 1–2 minutes. Stir in sun-dried tomatoes before adding heavy cream; heat until bubbling.
  5. Finish the dish: Stir in Parmesan cheese and spinach, then return cooked chicken to the pan.
  6. Prepare spaghetti squash: Cut it in half lengthwise to remove seeds; scrape out strands with a fork.
  7. Combine everything: Mix spaghetti squash into the sauce until well coated; garnish with parsley if desired.
