  • 1 1/4 cups dry sushi rice
  • 1 large napa cabbage
  • 1 medium onion
  • 3 cloves garlic
  • 1 medium carrot
  • 2 medium peppers
  • 8 white button mushrooms (canned or fresh)
  • 2 tbsp tamari (or coconut aminos)
  • 1 tbsp oil (divided)
  • 3/4 tbsp ginger (minced)
  • 1/2 tsp each of sea salt, ground pepper, onion powder
  • 1/4 tsp red pepper flakes (or to taste)
  • For the garlic sauce: 1 tsp oil, 1/2 tbsp ginger (minced), 2 garlic cloves (minced), 1 1/2 tbsp tamari (or coconut aminos), 1 tbsp rice vinegar, 3/4 tbsp maple syrup, 1/2 cup water, 1/2 tbsp cornstarch, salt, pepper, red pepper flakes, smoked paprika (to taste)

Instructions

  1. Boil water in a large pot and carefully remove the cabbage leaves. Cook for about 5 minutes until tender, then cool.
  2. In a frying pan, sauté diced onion, ginger, and garlic in oil until fragrant. Add carrots, peppers, and mushrooms; cook until tender.
  3. In a mixing bowl, combine cooked rice with the sautéed vegetables and seasonings.
  4. Lay out each cabbage leaf and fill with about 2 tablespoons of the mixture. Roll tightly from the base while tucking in the sides.
  5. Preheat oven to 375°F (190°C). Spread some garlic sauce at the bottom of a baking dish, place rolls seam-side down, pour remaining sauce over them, cover with foil, and bake for about 30 minutes.
