- 1 pound ground chicken sausage
- 3 garlic cloves, minced
- 1 medium white onion, peeled and diced
- 1.5 pounds Yukon Gold potatoes, diced
- 5 to 6 cups chicken stock
- 2 to 3 cups chopped fresh kale
- 1 cup heavy whipping cream
- fine sea salt
- freshly-ground black pepper
Instructions
- In a large stockpot over medium-high heat, cook the ground chicken sausage until browned. Use a slotted spoon to transfer sausage to a plate, reserving about 1 tablespoon of grease.
- Sauté the diced onion in the reserved grease for 5 minutes until softened. Add minced garlic and sauté for another minute.
- Stir in diced Yukon Gold potatoes and chicken stock, then add the cooked sausage back into the pot. Bring to a simmer and let cook for 10 minutes until potatoes are tender.
- Add chopped kale and heavy cream, simmering for an additional 5 minutes. Season with salt and pepper to taste.
- Serve warm, optionally garnished with crumbled bacon or cheese.
