  • 4 slices turkey bacon (diced)
  • 1 medium yellow onion (minced)
  • 1/2 green bell pepper (minced)
  • 2 cloves garlic (minced)
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1/2 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce substitute (ensure it's non-alcoholic)
  • 1 tablespoon hickory liquid smoke (optional)
  • 3/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 tablespoon chipotle BBQ rub
  • 1 cup strong brewed coffee
  • 1 cup reserved bean liquid (from cooking the beans)

Instructions

  1. Soak the dried pinto beans overnight in water. Drain and rinse before use.
  2. In a large pot, cook diced turkey bacon over medium heat until crispy. Remove and retain some fat for flavor.
  3. Sauté minced onion, bell pepper, and garlic in the same pot until soft (about 5-7 minutes).
  4. Return soaked beans to the pot along with all remaining ingredients.
  5. Bring to a boil over medium-high heat, then reduce heat to low and simmer partially covered for about 90 minutes or until beans are tender.
  6. Adjust seasoning as necessary before serving warm.
