  • 4 lb beef butt roast
  • 3 tbsp light brown sugar
  • 2 tsp kosher salt
  • 1 tsp ground mustard
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 1/2 cups chicken broth
  • 1 tbsp Worcestershire sauce (non-alcoholic)
  • 2 tbsp olive oil
  • 1/2 – 1 cup of your favorite BBQ sauce

Instructions

  1. Trim excess fat from the beef roast and cut it into four chunks.
  2. Combine brown sugar, salt, mustard, pepper, onion powder, paprika, garlic powder, and cayenne pepper in a bowl. Coat the beef chunks thoroughly with this rub.
  3. In the Instant Pot on sauté mode, heat olive oil and sear each piece of beef until browned (about 2 minutes per side). Remove and set aside.
  4. Deglaze the pot with chicken broth, scraping up any bits stuck to the bottom. Add Worcestershire sauce and remaining broth.
  5. Place all beef chunks back into the pot and seal the lid. Cook on high pressure for 60 minutes; allow natural pressure release for an additional 20 minutes.
  6. Shred the beef using two forks and mix with your favorite BBQ sauce.
