  • 1 pound lean ground beef
  • 6 cups chopped romaine lettuce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup thinly sliced onions (white or red)
  • 1/2 cup dill pickle slices
  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 2 tablespoons dill pickle relish
  • 1 teaspoon dried minced onion
  • 1 teaspoon white vinegar
  • 2 teaspoons sugar
  • 1/4 teaspoon salt (more or less to taste)
  • 1 tablespoon neutral flavored oil (avocado oil, olive oil, etc.)
  • 1 teaspoon salt (more or less to taste)
  • 1/2 teaspoon freshly cracked black pepper (more or less to taste)

Instructions

  1. In a mixing bowl, prepare the dressing by combining mayonnaise, ketchup, dill pickle relish, minced onion, vinegar, sugar, and salt. Mix until smooth.
  2. Heat oil in a large skillet over medium heat. Add ground beef, season with salt and pepper, and cook until browned (5-7 minutes). Drain excess fat if needed.
  3. On serving plates, layer chopped romaine lettuce followed by cooked ground beef. Top with cheddar cheese, tomatoes, onions, and dill pickles.
  4. Drizzle the dressing over each salad just before serving and toss gently if desired.
