  • 1 1/2 Lb chicken tenderloins (tendons removed)
  • 2 1/2 Tsp garlic powder
  • 2 Tsp seasoned salt (to taste)
  • 2 Tsp onion powder
  • 1 Tbsp paprika
  • 2 Tsp dark red chili powder
  • 1 Tsp smoked paprika
  • 1 Tsp black pepper (freshly cracked)
  • 1/2 Tsp cayenne pepper (optional)
  • 1/2 Tsp dried oregano
  • 1/2 Tsp rubbed sage
  • 1/4 Tsp dried thyme
  • 1/8 Tsp granulated sugar
  • Vegetable oil (for frying)

Instructions

  1. Combine all spices in a small bowl. In a large mixing bowl or Ziploc bag, coat the chicken tenderloins with the spice mix. Refrigerate for at least 4 hours (preferably overnight).
  2. Heat vegetable oil in a large pot to approximately 360°F.
  3. Carefully add seasoned chicken to the hot oil and fry for about 7 minutes until golden brown and cooked through (internal temperature should reach 160°F).
  4. Drain cooked tenders on a wire rack over a baking sheet to keep them crisp.
