  • 2 cups finely crushed graham crackers
  • 10 tablespoons salted sweet cream butter (melted)
  • 32 ounces cream cheese (softened)
  • 1½ cups granulated sugar
  • ¾ cup sour cream
  • 4 large eggs (room temperature)
  • 2¼ cups fresh blueberries
  • 4 cups frozen blueberries
  • Fresh lemon zest

Instructions

  1. Preheat oven to 325°F (163°C). Mix crushed graham crackers, melted butter, and sugar; press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth; gradually mix in sugar. Add sour cream, cornstarch, lemon zest, and eggs one by one. Mix until creamy.
  3. Pour filling over crust and bake for about 120 minutes until set. Cool in the oven with the door ajar for one hour.
  4. For the blueberry topping, combine fresh and frozen blueberries with sugar and cornstarch in a saucepan over medium heat until thickened.
  5. Once cooled slightly, pour topping over cheesecake and refrigerate for at least four hours before serving.
