  • 1/4 cup whole milk
  • 1 cup mayonnaise
  • 1/4 cup sweet bbq sauce
  • 1/4 cup honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/2 teaspoon smoked paprika
  • 4 slices pepper jack cheese
  • 4 multigrain buns
  • 4 leaves green lettuce
  • 4 slices Beefsteak tomato

Instructions

  1. Cut chicken breasts in half lengthwise to create four thin-cut pieces.
  2. Whisk together pickle juice, milk, powdered sugar, garlic powder, onion powder, salt, pepper, and smoked paprika in a bowl. Add chicken and coat well; cover and refrigerate for at least 30 minutes.
  3. Prepare the sauce by whisking mayonnaise, BBQ sauce, honey, Dijon mustard, lemon juice, and smoked paprika in another bowl; refrigerate until needed.
  4. Preheat a grill pan over medium heat and cook marinated chicken for about 15 minutes until cooked through (165°F internal temperature).
  5. Assemble sandwiches with lettuce, tomato, grilled chicken topped with cheese, and drizzle sauce on buns before serving.
