Corn ribs are a fun and delicious twist on traditional corn on the cob, transforming sweet corn into bite-sized strips bursting with flavor.   • 4 whole corn cobs
  • 3 tbsp extra virgin olive oil
  • 1 ½ tsp garlic powder
  • 2 ½ tsp smoked paprika
  • 2 tsp cooking salt
  • 2 tsp black pepper
  • 50g (3 tbsp) unsalted butter
  • 1 garlic clove (minced)
  • Optional garnish: parsley or cilantro

Instructions

  1. Remove husks and silk from the corn cobs and rinse them under cold water.
  2. Carefully slice each corn cob into quarters lengthwise using a sharp knife.
  3. In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and black pepper. Brush mixture generously over each corn rib.
  4. Cooking options: To Grill: Preheat the grill to medium heat. Cook corn ribs for about 10-15 minutes, turning occasionally until charred. To Bake: Preheat the oven to 400°F (200°C). Arrange corn ribs on a baking sheet and bake for 20-25 minutes until golden brown.
  5. Melt unsalted butter in a small saucepan over low heat; add minced garlic. Drizzle over hot corn ribs before serving.
  6. Garnish with chopped parsley or cilantro if desired and serve warm.
