  • 57 pounds beef butt or shoulder
  • 3 tablespoons olive oil
  • 2 tablespoons vegetable oil
  • 1 tablespoon kosher salt
  • 2 teaspoons black pepper
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper
  • 2 teaspoons cumin
  • 1 teaspoon dry mustard powder
  • 1/3 cup brown sugar (packed)
  • Barbecue sauce for serving
  • Brioche hamburger buns
  • Coleslaw

Instructions

  1. Rub the beef with olive oil and optional liquid smoke.
  2. In a skillet, heat vegetable oil and sear the beef on all sides until browned.
  3. Mix together salt, black pepper, paprika, garlic powder, chili powder, cayenne pepper, cumin, dry mustard powder, and brown sugar.
  4. Coat the seared beef evenly with the spice mixture.
  5. Place the beef in your slow cooker and add barbecue sauce to coat lightly.
  6. Cover and cook on low for about 8 hours until tender.
  7. Shred the beef using two forks and serve on buns or alongside your favorite sides.
