Ingredients
- 1 boneless 3-4 pound chuck roast (trimmed and cut into fist-size chunks)
- Salt and pepper
- 3 tablespoons vegetable oil
- 1 medium white or yellow onion (diced)
- 1–6 cups beef or chicken broth
- 1/4 cup lime juice
- 1/4 cup apple cider vinegar
- 2 chipotle peppers in adobo sauce (minced, optional)
- 4 cloves garlic (pressed or minced)
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1/4 teaspoon ground cloves (optional)
- 3/4 teaspoon salt
- 3 bay leaves
Instructions
- Trim excess fat from the chuck roast and cut it into fist-sized chunks. Season generously with salt and pepper.
- Heat vegetable oil in a large skillet over medium-high heat. Sear the beef chunks in batches until browned on all sides. Transfer to a slow cooker.
- In the same skillet, sauté diced onion until softened, then add minced garlic. Pour this mixture over the beef in the slow cooker.
- Add enough broth to cover the beef along with lime juice, apple cider vinegar, spices, and bay leaves.
- Cook on low for 8 hours or high for 4 hours until the beef is fork-tender.
- Shred the beef in the slow cooker using two forks and mix well with juices before serving.
