  • 1 boneless 3-4 pound chuck roast (trimmed and cut into fist-size chunks)
  • Salt and pepper
  • 3 tablespoons vegetable oil
  • 1 medium white or yellow onion (diced)
  • 16 cups beef or chicken broth
  • 1/4 cup lime juice
  • 1/4 cup apple cider vinegar
  • 2 chipotle peppers in adobo sauce (minced, optional)
  • 4 cloves garlic (pressed or minced)
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1/4 teaspoon ground cloves (optional)
  • 3/4 teaspoon salt
  • 3 bay leaves

Instructions

  1. Trim excess fat from the chuck roast and cut it into fist-sized chunks. Season generously with salt and pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat. Sear the beef chunks in batches until browned on all sides. Transfer to a slow cooker.
  3. In the same skillet, sauté diced onion until softened, then add minced garlic. Pour this mixture over the beef in the slow cooker.
  4. Add enough broth to cover the beef along with lime juice, apple cider vinegar, spices, and bay leaves.
  5. Cook on low for 8 hours or high for 4 hours until the beef is fork-tender.
  6. Shred the beef in the slow cooker using two forks and mix well with juices before serving.
