  • 2 tablespoons lime juice
  • 2 teaspoons chile powder
  • 2 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 2.5 pounds boneless skinless chicken, cut into strips
  • 2 yellow onions, sliced
  • 2 bell peppers, sliced
  • Tortillas (corn or flour)

Instructions

  1. In a mason jar or blender, combine avocado oil, lime juice, chile powder, sea salt, garlic powder, ground cumin, and cayenne pepper. Mix until well combined.
  2. Place chicken strips in a shallow dish and pour the marinade over them. Ensure all pieces are evenly coated and refrigerate for at least 2 hours.
  3. Preheat your Blackstone griddle to medium-high heat and brush with avocado oil.
  4. Add sliced onions and bell peppers to one side of the griddle; cook until tender.
  5. On the other side, add marinated chicken strips and cook for about 6-9 minutes until fully cooked and golden brown.
  6. Warm tortillas on the griddle for about 1 minute each before serving.
  7. Serve hot with desired toppings such as shredded cheese, sour cream, lime wedges, diced tomatoes, chopped cilantro, or salsa.
