- 3/4 cup pineapple juice
- 1/2 cup coconut aminos
- 1/2 cup ketchup
- 1/2 cup brown sugar
- 2 tablespoons Frank’s Red Hot sauce
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 1/2 lbs chicken thighs (skinless and boneless)
- 20 oz can pineapple chunks
- Sea salt and black pepper to taste
Instructions
- In a saucepan, combine pineapple juice, coconut aminos, ketchup, brown sugar, Frank’s Red Hot sauce, garlic, and ginger. Bring to a boil over medium heat; reduce and simmer for 10-12 minutes until thickened.
- Cut chicken into bite-sized pieces and marinate in cooled sauce for at least one hour in the refrigerator.
- Thread marinated chicken and drained pineapple onto skewers alternately. Season with salt and pepper.
- Preheat grill to medium-high heat and cook kabobs for 10-12 minutes, turning occasionally while brushing with leftover marinade.
- Serve hot with extra sauce on the side.
