  • 1 head of cabbage (preferably red)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter (or plant-based margarine)
  • 3 cloves garlic (minced)
  • 1 teaspoon thyme
  • 1 tablespoon lemon juice
  • Sea salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Remove damaged outer leaves from the cabbage and slice it into thick steaks, about 1-inch thick.
  3. Line a baking sheet with parchment paper and arrange the cabbage steaks on it.
  4. In a mixing bowl, combine olive oil, sea salt, and black pepper then brush this mixture over both sides of each steak.
  5. In another bowl, melt the butter and stir in minced garlic, thyme, lemon juice, and optional red-pepper flakes.
  6. Coat each cabbage steak evenly with the garlic butter mixture.
  7. Roast in the oven for 25-30 minutes or until edges are crispy and golden brown, flipping halfway through.
