  • 4 Russet potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 1/2 cup freshly grated Parmigiano Reggiano cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Peel and slice the Russet potatoes into 1/2-inch thick fries. Rinse under cold water and pat dry.
  2. In a large mixing bowl, toss the potato slices with olive oil, kosher salt, black pepper, garlic powder, and dried oregano until evenly coated.
  3. Spread the seasoned fries in a single layer on parchment-lined baking sheets. Bake for 20-25 minutes until they begin to brown.
  4. Flip the fries and sprinkle half of the Parmigiano Reggiano on top. Bake for an additional 10-15 minutes until golden and crispy.
  5. For added crispiness, bake for another 10-15 minutes or until tender inside and crispy outside. Sprinkle remaining cheese over hot fries before serving.
