  • 2 lbs boneless skinless chicken thighs
  • 2 tsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp yellow onion (finely chopped)
  • 1 clove garlic (minced)
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1/2 cup ketchup
  • 1 tsp paprika
  • 2 tsp sriracha
  • 2 tsp hot chili paste (sambal olek or substitute sriracha)
  • 1/2 tbsp chili powder
  • 2 tsp mustard

Instructions

  1. In a small saucepan over medium heat, melt butter and sauté chopped onions until tender. Add minced garlic and cook until fragrant.
  2. Stir in remaining BBQ sauce ingredients and bring to a low simmer for about 15 minutes until thickened.
  3. Season the chicken thighs with olive oil, salt, and black pepper.
  4. Preheat grill to medium-low heat. Grill chicken thighs smooth side down, turning every 3-4 minutes until juices run clear and internal temperature reaches 165°F.
  5. Baste with BBQ sauce during the last few minutes of grilling.
