  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 large mangoes (diced)
  • 1 red bell pepper (diced)
  • ½ red onion (diced)
  • juice of 1 lime
  • salt and pepper to taste

Instructions

  1. Prepare the mango salsa by combining diced mangoes, red bell pepper, red onion, cilantro, lime juice, and salt in a mixing bowl. Set aside.
  2. Heat olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper.
  3. Place salmon skin-side down in the skillet and cook for about 4-5 minutes until golden brown. Flip carefully, add butter and honey around the fillets, spooning the mixture over them as they cook for another 4-5 minutes until flaky.
  4. Serve warm topped with the mango salsa.
