  • 34 pound beef brisket with spice packet
  • 1 yellow onion (quartered)
  • 12 russet potatoes (1-inch chunks)
  • 6 medium carrots (12 inch chunks)
  • 1 head of cabbage (cut into wedges)

Instructions

  1. Prep Corned Beef: Place the trivet inside the Instant Pot. Pour in 4 cups of water and place the brisket on the trivet, topping it with the spice packet.
  2. Cook: Seal the pot and cook on HIGH pressure for 70 minutes. Allow for a natural release for 10 minutes, then manually release any remaining pressure.
  3. Cook Veggies: With the remaining liquid in the pot, add onions, potatoes, carrots, and cabbage. Seal and cook on HIGH pressure for 2-3 minutes, then manually release.
  4. Serve: Slice the brisket and serve alongside the cooked vegetables. Optionally drizzle with reserved cooking liquid.
