  • 2 cups cherry tomatoes (halved)
  • 12 oz tri-color rotini pasta
  • 8 oz mozzarella cheese (diced into cubes)
  • 6 oz sliced black olives (drained)
  • 1 green bell pepper (diced)
  • 1 small red onion (chopped)
  • ¼ cup fresh parsley (chopped)
  • 1 cup Italian dressing
  • 1 teaspoon Italian seasoning
  • ½ teaspoon pepper
  • ½ teaspoon salt

Instructions

  1. Cook the tri-color rotini pasta according to package directions until al dente.
  2. Drain using a colander and rinse with cold water to cool.
  3. In a large mixing bowl, combine the cooled pasta with cherry tomatoes, black olives, diced bell pepper, chopped red onion, parsley, diced mozzarella cheese, salt, pepper, Italian seasoning, and Italian dressing.
  4. Mix well to ensure all ingredients are evenly coated. Cover and refrigerate for at least 2 hours before serving.
