  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 3/4 cup blueberries
  • 250 g cream cheese (about 8oz)
  • 1/2 cup softened butter (for frosting)
  • 1 tablespoon lemon juice (for frosting)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a stand mixer, cream together softened butter and sugar until light and fluffy.
  3. Add eggs, vanilla extract, milk, and lemon juice; mix well.
  4. In another bowl, combine baking powder, flour, lemon zest, and salt; gradually add this to the wet mixture until smooth.
  5. Toss blueberries in flour to coat and gently fold them into the batter.
  6. Fill each liner three-quarters full with batter and bake for about 15 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool before frosting with lemon cream cheese frosting made from cream cheese, softened butter, lemon juice, and powdered sugar.
