- 1 cup ricotta cheese

Instructions
- Preheat the oven to 400°F.
- Prepare the crostini by spreading a mixture of butter and minced garlic on each baguette slice. Arrange on a baking sheet.
- Bake for 10–12 minutes until golden brown and crunchy.
- In a bowl, combine chopped tomatoes, diced peaches, remaining garlic, olive oil, lemon juice, salt, and pepper. Let sit.
- In a food processor, blend ricotta until smooth.
- Assemble by spreading whipped ricotta on toasted crostini and topping with the peach-tomato mixture. Drizzle with balsamic glaze before serving.
