  • 1 baguette, thinly sliced
  • ¼ cup unsalted butter
  • 4 garlic cloves, minced
  • 1 pint tomatoes, chopped
  • 3 medium ripe peaches, diced
  • 2 tablespoons extra virgin olive oil
  • Juice of ½ lemon
  • Fresh basil leaves, chopped
  • 1 cup ricotta cheese
  • Balsamic glaze for topping

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the crostini by spreading a mixture of butter and minced garlic on each baguette slice. Arrange on a baking sheet.
  3. Bake for 10–12 minutes until golden brown and crunchy.
  4. In a bowl, combine chopped tomatoes, diced peaches, remaining garlic, olive oil, lemon juice, salt, and pepper. Let sit.
  5. In a food processor, blend ricotta until smooth.
  6. Assemble by spreading whipped ricotta on toasted crostini and topping with the peach-tomato mixture. Drizzle with balsamic glaze before serving.
