  • 1 tablespoon unsalted butter (cold)
  • 6 teaspoons light brown sugar
  • 3 fresh peaches
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2/3 cup granulated sugar
  • 1/3 cup unsalted butter (at room temperature)
  • 1 large egg (at room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk (at room temperature)

Instructions

  1. Preheat the oven to 350°F (177°C) and spray a muffin pan with non-stick cooking spray.
  2. Wash and slice the peaches into wedges. In a bowl, mix cold butter with light brown sugar until combined.
  3. Distribute the butter-sugar mixture in the bottom of each muffin cup and arrange peach wedges on top.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. In another bowl, cream granulated sugar with room temperature butter until fluffy. Beat in egg, vanilla, and buttermilk until smooth.
  6. Gradually add dry ingredients to the wet mixture, stirring gently until just combined.
  7. Spoon batter over peaches in muffin cups until three-quarters full.
  8. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
