  • 34 pound boneless beef shoulder
  • 1/2 cup low-sodium chicken broth
  • 1/3 cup apple cider vinegar
  • 1/4 cup packed brown sugar
  • 3 teaspoons kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons dry ground mustard
  • 1 teaspoon cumin
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 8 soft sandwich rolls (for serving)
  • BBQ sauce (for serving)
  • coleslaw (for serving)

Instructions

  1. Trim excess fat from the beef shoulder and cut it into four even pieces.
  2. Mix brown sugar and spices in a bowl and rub the mixture over each piece of beef.
  3. In a Dutch oven or slow cooker, pour in chicken broth and vinegar; add seasoned beef pieces.
  4. For the oven method: Cover and cook at 300°F for 3 hours; then uncover and cook for an additional 1-2 hours until tender. Shred with forks.
  5. For the slow cooker: Cook on LOW for 8-10 hours until very tender; shred as above.
  6. For the Instant Pot: Cook on Manual/High pressure for 65 minutes, then allow natural pressure release before shredding.
  7. Serve on rolls with BBQ sauce and coleslaw.
