Ingredients
- 3–4 pound boneless beef shoulder
- 1/2 cup low-sodium chicken broth
- 1/3 cup apple cider vinegar
- 1/4 cup packed brown sugar
- 3 teaspoons kosher salt
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons smoked paprika
- 2 teaspoons dry ground mustard
- 1 teaspoon cumin
- 1 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper (or to taste)
- 8 soft sandwich rolls (for serving)
- BBQ sauce (for serving)
- coleslaw (for serving)
Instructions
- Trim excess fat from the beef shoulder and cut it into four even pieces.
- Mix brown sugar and spices in a bowl and rub the mixture over each piece of beef.
- In a Dutch oven or slow cooker, pour in chicken broth and vinegar; add seasoned beef pieces.
- For the oven method: Cover and cook at 300°F for 3 hours; then uncover and cook for an additional 1-2 hours until tender. Shred with forks.
- For the slow cooker: Cook on LOW for 8-10 hours until very tender; shred as above.
- For the Instant Pot: Cook on Manual/High pressure for 65 minutes, then allow natural pressure release before shredding.
- Serve on rolls with BBQ sauce and coleslaw.
