  • 1 pound shrimp (peeled and deveined)
  • 4 tablespoons olive oil
  • 1 1/2 tablespoons honey
  • 1 1/2 tablespoons soy sauce
  • 1 teaspoon lemon zest
  • 2 teaspoons fresh parsley leaves (chopped)
  • 2 teaspoons fresh thyme leaves (chopped)
  • 3/4 teaspoon minced garlic
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine olive oil, honey, soy sauce, lemon zest, parsley, thyme, salt, and pepper. Whisk until smooth.
  2. Reserve 1 tablespoon of marinade for later use. Add minced garlic to the bowl and mix well.
  3. Place shrimp in a resealable freezer bag with the marinade. Seal tightly and shake gently to coat.
  4. Refrigerate for at least 1 hour or up to 8 hours.
  5. Cook shrimp on a grill or skillet over medium-high heat for about 2-3 minutes per side until pink and opaque.
