  • 10.75 oz low sodium cream of chicken soup
  • 1 envelope dry ranch dressing mix or 1/4 cup homemade ranch seasoning
  • 1/2 cup water
  • 1/4 cup finely diced sweet red bell pepper
  • 4 oz cream cheese, cut into small cubes
  • 3 tbsp grated Parmesan cheese

Instructions

  1. In a slow cooker, mix cream of chicken soup and ranch seasoning; gradually stir in water until smooth.
  2. Add diced sweet red bell pepper and stir to combine.
  3. Place the boneless skinless chicken on top, ensuring it's submerged in the sauce.
  4. Cover and cook on low for 6-8 hours or high for 3-5 hours.
  5. About 30 minutes before serving, add cubed cream cheese and grated Parmesan cheese; cover and continue cooking.
  6. Stir well before serving to blend in the cream cheese.
