  • 8 lb beef butt
  • 1/2 tsp cumin
  • 1 tsp onion powder
  • 2 tsp garlic salt
  • 2 tsp coarse black pepper
  • 1 tsp red cayenne pepper
  • 1/4 cup kosher salt
  • 1/2 cup brown sugar

Instructions

  1. Trim excess fat from the beef butt.
  2. In a bowl, combine cumin, onion powder, garlic salt, black pepper, cayenne pepper, kosher salt, and brown sugar.
  3. Generously rub the spice mixture over all sides of the beef butt; let it sit for 30 minutes.
  4. Preheat your smoker to 225°F (107°C).
  5. Place the beef butt on the smoker rack; insert a meat thermometer into the thickest part.
  6. Smoke for about 4 hours without opening the lid.
  7. Wrap the meat in aluminum foil or butcher paper; return to smoker for an additional 3-4 hours until internal temperature reaches between 190°F (88°C) and 205°F (96°C).
  8. Allow resting for at least 30 minutes before slicing.
