Ingredients

  • 500 ml water
  • 500 ml white vinegar
  • 1/4 cup sugar
  • 1/4 cup honey
  • 2 tbsp salt
  • 78 medium cucumbers
  • 23 sprigs dill
  • 1 tbsp chili flakes
  • 1 tbsp peppercorns (variety of black, white, pink)
  • 78 cloves garlic

Instructions

  1. Wash cucumbers and cut them into spears or slices.
  2. In a large mixing bowl, combine water, white vinegar, sugar, honey, and salt; stir until mixed.
  3. Add dill, chili flakes, peppercorns, and garlic to the brine mixture.
  4. Place cucumber pieces in a clean jar and pour the brine over them until fully submerged; seal tightly.
  5. Preheat your smoking device according to instructions; smoke the sealed jar for approximately 60 minutes.
  6. Allow the pickles to cool before refrigerating; let them sit for at least one day for optimal flavor.
