- 4–6 bone-in chicken thighs
- 1 green pepper
- 1 red pepper
- 1 onion
- 4 tablespoons unsalted butter
- 6 tablespoons flour
- 1/2 cup chicken broth
- 1 teaspoon cajun seasoning
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons paprika
Instructions
- Preheat your oven to 350°F.
- Season chicken thighs with cajun spice, salt, pepper, garlic powder, onion powder, and 1 tablespoon of flour.
- In a skillet, melt butter and sear the seasoned chicken until golden brown on both sides. Remove and set aside.
- Sauté sliced onions and peppers in the same skillet until tender.
- Create a roux by adding another tablespoon of butter and mixing in 3 tablespoons of flour until smooth.
- Return the seared chicken to the pan along with chicken broth and herbs; mix well.
- Cover and bake for 20 minutes, then thicken gravy with additional flour if needed before baking uncovered at 375°F for another 20 minutes.
