Ingredients

  • 4 russet potatoes
  • 1/2 cup sour cream
  • 1/2 cup half-and-half
  • 2 Tbsp green onions (diced)
  • 1/4 cup cooked chicken (chopped)
  • 1 1/2 cups cheddar cheese (grated)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F. Wash and dry the potatoes, then poke holes in them with a fork. Bake on a baking sheet for 45-60 minutes until easily pierced.
  2. Cut the baked potatoes in half lengthwise and scoop out the insides into a mixing bowl, leaving about 1/4” in the skins.
  3. Mash the potato flesh until smooth, then mix in sour cream, half-and-half, salt, pepper, garlic salt, green onions, chicken, and 1 cup of cheddar cheese until creamy.
  4. Spoon the filling back into the potato skins and top with remaining cheese.
  5. Lower the oven temperature to 350°F and bake for an additional 15-20 minutes until heated through and golden on top.
