Ingredients
- 2 medium yuca
- 3/4 cup olive oil
- 3 navel oranges (juiced)
- 2 lemons (juiced)
- 4 cloves garlic (minced)
- 1 tablespoon cumin
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 & 1/4 teaspoon sea salt
- 1/4 teaspoon ground white pepper
- 1/4 red onion (thinly sliced)
- 3 tablespoons fresh cilantro (chopped)
Instructions
- Peel and dice yuca into 1-inch cubes. Boil in salted water for 15-20 minutes until fork-tender. Drain.
- In a mixing bowl, whisk together olive oil, orange juice, lemon juice, minced garlic, cumin, oregano, garlic powder, onion powder, salt, and white pepper until well combined.
- Toss the cooled yuca in the Mojo sauce along with sliced red onion and chopped cilantro until evenly coated.
