  • 2 medium yuca
  • 3/4 cup olive oil
  • 3 navel oranges (juiced)
  • 2 lemons (juiced)
  • 4 cloves garlic (minced)
  • 1 tablespoon cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 & 1/4 teaspoon sea salt
  • 1/4 teaspoon ground white pepper
  • 1/4 red onion (thinly sliced)
  • 3 tablespoons fresh cilantro (chopped)

Instructions

  1. Peel and dice yuca into 1-inch cubes. Boil in salted water for 15-20 minutes until fork-tender. Drain.
  2. In a mixing bowl, whisk together olive oil, orange juice, lemon juice, minced garlic, cumin, oregano, garlic powder, onion powder, salt, and white pepper until well combined.
  3. Toss the cooled yuca in the Mojo sauce along with sliced red onion and chopped cilantro until evenly coated.
  4. Serve immediately or let it marinate for enhanced flavor.
